Das leichte Knoblaucharoma und die Grobkörnigkeit erinnern sowohl hinsichtlich der Verarbeitung als auch des unverwechselbaren Geschmacks an handwerklich hergestellte Produkte der antiken Wurstwarenherstellung in Mantua.

Zur Zubereitung dieser Salami werden im Einklang mit den bäuerlichen Traditionen derer, die ihre Salami zuhause selbst gemacht haben, alle Teile vom Schwein verwendet (Lende, Schulter, Keule, Nacken). Das Fleisch wird grob gehackt. Anschließend wird es verknetet, heiß gehackt, mariniert und mit einfachen Zutaten gewürzt: Salz, Pfeffer, frischer, natürlicher, im Mörser zerstoßener Knoblauch, Rotwein, Gewürze. Diese Masse muss jetzt eine Nacht ruhen und wird am nächsten Tag in mit Weißwein ausgewaschenem Naturdarm abgefüllt, der von Hand mit einem Jutefaden verschlossen und abgebunden wird.

Die Trocken- und Reifezeit folgen einem langsamen und physiologischen Rhythmus. Aus diesem Grund lässt man die auf diese Weise erzeugte Salami mindestens 4 und 6 Monate (in Abhängigkeit von der Stückgröße) im Halbschatten des feuchten Kellers des Salumificio Pedrazzoli reifen.

I feel like the harnesses for the wall don't fit the wood well enough, so you can get different distances from the wall, and one of my shelves is half a centimeter below the others, even though I lined it up the same. But they are sturdy shelves and very pretty. My only real complaint is the screw anchors for the walls. They are SERIOUS. I doubt these will ever fall out of the wall, for real. The only problem is, they eat the wall as you are putting them in. If I ever decide to move these, I will have to do some serious dry wall repair.
