Die familienbetriebene Ölmühle OliOli Biodinamico ist die einzige Ölmühle in der Valencia Region, die ausschließlich in Bio Qualität produziert.

Das native Olivenöl extra der Sorte Arroniz kommt von jungen Olivenbäumen. OliOli hat vor ein paar Jahren damit begonnen, sie "experimentell" anzubauen.  Nach dem gutem Verhalten dieser Olivensorte in dieser Gegend (in der Nähe von Valencia), wurde der Anbau erweitert. Der Ertrag ist aber noch sehr klein.

Verkostungsnoten:

Leicht bitter und intensiv scharf mit Noten nach Chilli. Grüne Aromen, die an Stiele von Artischocken, Tomatenpflanze, Zitrusfrüchte und Apfel erinnern.
