Die doppelte Reifung in verschiedenen Klimazonen, eine sorgfältige Fassauswahl und viel Liebe in der handwerklichen Herstellung sind der Garant für ganz besondere Geschmackserlebnisse. Jede Edition des Extrafass ist einmalig und auf wenige hundert Flaschen limitiert. Unsere Extrafässer sind so außergewöhnlich und experimentierfreudig wie unsere Stadt.

ZUCKERROHR AUS PANAMA

Das Zuckerrohr für unseren Extrafass Small Batch Rum wächst in den tropischen Ebenen Panamas. Hier herrscht das perfekte Klima für die bis zu 4m hohen Zuckerrohrpflanzen, welche dem Rum sein einzigartiges Aroma geben. Nach der Ernte wird das Zuckerrohr behutsam ausgepresst und der Zuckersaft gekocht. Die dabei entstehende Melasse ist Grundlage des köstlichen Rums.

MAISCHUNG

Die Melasse wird zuerst verdünnt und dann mit Skimming und Dunder gemischt. Der Skimming ist ein Schaum, der bei der Zuckerproduktion entsteht und ist wichtig fürs Aroma des Rums. Der Dunder sind Säuren und andere Gärrückstände früher Maischen – er ist praktisch das aromatische Gedächtnis dieses köstlichen Panama-Rums.

GÄRUNG

Die Maische wird in der Brennerei in Panama mit speziell selektierten Hefen zur Gärung gebracht. Dabei wird der Rohrzucker in Alkohol verwandelt. Dabei entstehen verschiedene Fruchtaromen, von Ananas über Mango bis hin zu reifen Äpfeln und Aprikosen.

DESTILLATION

Der Rum für unsere Extrafässer wird in einer Brennerei im Herzen Panamas destilliert. Dies geschieht auf einer großen Kolonnenbrennblase. Bei dieser „spanischen“ Version der Rumdestillation entsteht eine sehr weiche, runde und fruchtige Spirituose, mit weniger Ecken und Kanten als bei Rums aus den ehemaligen englischen und französischen Kolonien.

REIFUNG IN PANAMA

Das heiß-feuchte Tropenklima im Herzen Panamas sorgt für eine intensive und schnelle Reifung. Dabei verdunstet ein relativ großer Anteil des Destillats als „Angels Share“. Trotzdem reift der Rum für unsere Extrafässer zwölf Jahre. In dieser Zeit entwickelt er komplexe Fruchtaromen, aber auch Vanille-, Karamell- und milde Holznoten. Der Rum reift in verschiedenen Bourbon-Fässern. Für unsere Extra-Fass Abfüllungen wird er vom Master Blender Francisco Fernández Pérez, auch als Don Pancho bekannt, geblendet.

A New Classic
Format: Kindle
I pre-ordered, so I was able to get the PDF and start reading early. Of all the books I own on the American Revolution, I think this one stands to become my "go to." It is encyclopedic in scope, but deftly avoids becoming a drudgery or a slog through a mire of textbook facts. Somehow, Eric has managed to include a great deal of detail without losing any of the drama. It’s the story that rises to the fore in a gripping tale that just happens to be true (and much more than that, is our heritage). All the trademark “Metaxas” hallmarks are here: judiciously placed humor and lightheartedness that never descends into silliness, seriousness that somehow never lacks in winsomeness, depth that never smothers. He manages to portray both the soberness that the subject deserves without losing the hopefulness that the story of the Revolution should inspire in us. And along the way, you’ll find yourself better understanding what “went down” and (just as importantly) what it means to you today. Excellent work. If you think another history book on the American Revolution cannot inspire you or keep your attention, this one is up to the challenge.

A witty, learned page-turner, replete with wacky anecdotes but suffused by wisdom and patriotic love. Metaxas shows how the biblical view of the human person made America possible, and weaves throughout the story pieces of evidence that Providence actively aided the pious patriots against their cynical, post-Christian enemies in Britain. I devoured this book in 72 hours, and now I want to go back and read it again.
