1. Bottom layer - Texas toast
2. Second layer - Meat of your choice - Buffalo chicken, hamburger, sausage, prime rib, pork tenderloin - endless possibilities...
3. Third layer - Fries.  Shoestrings are our favorite to use, but the fancy restaurants always use crinkle-cut for some reason.  LOTS of fries.
4. Fourth layer - Cheese sauce.  LOTS of cheese sauce.  Needs to be homemade.  Don't limit yourself to just cheddar - I always use pepperjack.  When you hit a restaurant in SPI (the only place you can get a horseshoe - for real) they ask what kind of sauce you'd like.  This is where the restaurants distinguish themselves from one another - who has the best cheese sauce.      
5. Top it off with whatever you want - green onions, chopped tomatoes, bacon bits, jalapenos....

Oh yea.  They make breakfast shoes too.  Figure it out on your own - but you should definitely do half gravy half cheese sauce.
