The palate is powerful, yet taught​ and fresh with a fine, slate like texture, great length and balanced fresh acidity.​​

Even if the grapes are grown by the same people, with the same care and attention, changes in soil, slope, altitude and shelter can subtly or dramatically alter the resulting wine, even over distances of a few hundred metres or less. Food Pairing: Well suited to richer seafoods such as scallops and crayfish or white meats and lighter game, especially where flavours of citrus and/or smoke are involved. ​​ This wine also is weighty enough in texture and depth to pair excellently with richer, creamy sauces.​
