One of the hottest chilli peppers in the world, Bhut Jolokia aka Ghost Pepper has made an appearance in our regular mouth-watering kimchi, making it blazing hot. Every bite will take you through a journey of flavours starting with a hint of sweet chilli taste until the heat kicks in. The lip-scorching heat of Bhut Jolokia blends perfectly with kimchi and makes it fiery enough to add that zing to your meals. Depending on your spice tolerance, start with a couple of spoons, to begin with.

FLAVOUR PROFILE

Taste: The main flavour notes you’ll find in kimchi include sour, spicy, and umami. Being a fermented dish, its most prominent flavour is typically sour. Lactic acid produced by bacteria during fermentation creates a tangy, pungent flavour. It is slightly astringent due to the acid formed during fermentation. There is a strong garlic flavour which intensifies during fermentation. Kimchi is a perfect example of an acquired taste because of its overpowering smell and its hot and pickled taste.

Texture and mouthfeel: Traditional kimchi made with Chinese cabbage tastes equally soft and crunchy. Kimchi becomes more compact and softer as fermentation progresses.

Smell: Kimchi smells just as intense as it tastes. Garlic and ginger produce a lot of sulphur compounds, which gives kimchi its peculiar pungent smell. As the vegetables ferment, they release gases which have a strong smell. The smell of authentic well fermented kimchi can be off-putting for some, but to derive the probiotic benefit of fermentation the smell has to be appreciated because the smell is linked to the flavour of the kimchi.

INGREDIENTS: Napa Cabbage, RO Water, Salt, Garlic, Onion, Korean Chilli Flakes (Gochu Garu), Soya Sauce, Spring Onion, Apple, Pear, Radish, Carrot, Leek, Rice Flour, Sugar, Ginger, Ghost Pepper (Bhut Jolokia), Seaweed, Xanthan Gum

Super informative and easy to read!
Format: Kindle
Fantastic! I didn't expect a book about taxes and financial planning to be a page turner, but it certainly was. I almost dreaded starting it because this topic is such a headache, but I started and then devoured it in a single day. What I really appreciate is that it went into detail where most books about author business just give mealy mouthed generalizations, not specific to any particular country, and then warn you that their non-advice "does not constitute legal advice." Write It Off actually goes into meaningful detail about the different types of business structures in the U.S. and how to decide which is best for you. The section on deductible expenses made me realize that I've been missing an opportunity to write off a significant expense that I hadn't even considered. The section at the end with a list of helpful expense -tracking and budgeting tools was super helpful too. I received an advance review copy for free and am leaving this review voluntarily, but I would definitely recommend this to any creative with a small business. It's not just for authors!

An Essential (Unique) Resource
I have been in finance for nearly thirty years, but accounting for my hobby writing practice is still a mess. Lots of laws, and rules, and detail. Yuck – who has time? Christy’s book simplifies many of these issues, distilling them down to the essentials, and empowering writers to do much of their own financial work. It may not eliminate the need for an accounting professional, but enables and may reduce those costs (not to mention – your accountant will appreciate you being more organized). This included everything from legal structure, to accounting and taxes. The exercises are relevant and not overwhelming. Great resource for anyone with a writing practice, whether it be international bestseller or those of us building on our hobby.

Great resource for authors
Format: Kindle
The book offers a variety of helpful tips from running your own business, filing types, inventory, taxes, and more. I will be referencing it again as it has so much information that I need to look back on. I received an advance review copy for free, and I am leaving this review voluntarily. Two issues with the book: 1) Parts of the book sounded like AI. Words like crucial, labyrinth, and the extensive use of bullets left me somewhat suspicious. It’s not a huge deal as it was heavily edited but was noticeable. 2) Formatting of some parts were in all bold which was hard to read. Entire bulleted sections were all bolder instead of just the first sentence. It needed to be updated and I think this was missed. The book is helpful and a good resource despite these two issues. I appreciated the vast amount of information provided which will be beneficial in the future.
