Creamy Garlic Prawns with Lemon and Spinach

Ingredients:

  • 500g Frozen Medium Prawns, thawed and peeled
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • Fresh parsley, chopped (for garnish)

Instructions:

  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  • Add the thawed and peeled Frozen Medium Prawns to the skillet and cook for about 2-3 minutes on each side, until they turn pink and opaque. Remove the prawns from the skillet and set aside.
  • In the same skillet, pour in the heavy cream, lemon juice, and lemon zest. Stir well to combine.
  • Season the sauce with salt and pepper to taste. Let the sauce simmer for about 2-3 minutes until it thickens slightly.
  • Add the fresh spinach leaves to the skillet and cook for about 1-2 minutes, until they wilt.
  • Return the cooked prawns to the skillet and toss them in the creamy garlic sauce to coat evenly.
  • Cook for an additional 1-2 minutes, until the prawns are heated through.
  • Remove the skillet from heat and garnish with freshly chopped parsley.
  • Serve the Creamy Garlic Prawns with Lemon and Spinach over cooked rice, pasta, or with crusty bread to soak up the delicious sauce.
