On the palate it is structured and textural, with a creamy mid-palate balanced by vibrant acidity and a savoury, mineral finish. Lees ageing adds complexity and length, resulting in a poised, age-worthy Sauvignon with excellent balance and individuality.

From some of the best vineyards in Buttrio, the grapes are estate-grown and hand-harvested. Fermentation is carried out using selected yeasts in barrique, followed by 24 months of maturation in barrel, including 10 months on the lees to build texture and depth. The wine is then refined in bottle for a further five months before release. Excellent with grilled fish, herb-roasted poultry, asparagus dishes, goat’s cheese or refined vegetarian cuisine.
