Château Ollieux Romanis is exactly that kind of producer. Based near Boutenac in the heart of the appellation, the estate has deep local roots and is now led by Pierre Bories, who has elevated the domaine’s reputation through meticulous vineyard work and a more precise, terroir-driven approach. The property is farmed certified organic, and the reds here are built around the region’s natural strengths: old-vine Mediterranean varieties and the savory complexity that comes from living soils and warm, windy sites.

The 2021 “Cuvée Prestige” Corbières-Boutenac is a classic, serious blend: 45% Carignan, 25% Mourvèdre, 20% Syrah, and 10% Grenache, grown on Boutenac’s distinctive red Mediterranean sandstone and puddingstone over sandstone. In the cellar, Carignan is handled with carbonic maceration for lift and aromatic vibrancy, while Syrah and Mourvèdre ferment with indigenous yeasts, with 12–18 days of cuvaison to build texture and depth. Aging is split: halfrests in used barrels (1–5 wine) for 6–12 months, while the other half stays in stainless steel at cool temperatures, keeping the wine both layered and fresh.
