VARIETAL

MARAGOGYPE IS A DISTINCTIVE COFFEE VARIETAL KNOWN FOR ITS UNUSUALLY LARGE BEANS, OFTEN CALLED “ELEPHANT BEANS.” IT ORIGINATED AS A NATURAL MUTATION OF TYPICA IN BRAZIL AND LATER SPREAD TO CENTRAL AMERICA, PARTICULARLY NICARAGUA AND MEXICO. MARAGOGYPE PLANTS TEND TO BE LOW-YIELDING AND DELICATE, MAKING THEM CHALLENGING TO CULTIVATE. IN THE CUP, THIS VARIETAL IS PRIZED FOR ITS MILD BODY, LOW ACIDITY, AND ELEGANT, NUANCED FLAVORS.
