'Edge Grain' boards do not self-heal as well as 'End Grain' boards, and may require occasional refinishing after a lot of use. They are however less expensive and are very high quality. 

These boards are made to be single sided with rubber feet to help ensure the board is not damaged by absorbing any liquids from wet countertops.

These boards are made to be approximately 1.75" thick (including height of the rubber feet) which makes them heavy enough to stay in place. Larger sizes are heavy enough to require two hands to lift.
