Origins & Craftsmanship
Produced by St. George Spirits in Alameda, California, this absinthe revival was among the first legal American absinthes after the U.S. ban. It begins with a base of fine brandy into which key herbs—wormwood (Artemisia absinthium), fennel, star anise—are macerated and distilled, then infused with a broad range of botanicals including lemon balm, hyssop, basil, tarragon, nettles and mint to build complexity. The finished spirit is bottled at 60% ABV (120 proof), delivering high strength and full flavor.
Herbs are used without artificial coloring; the natural green hue and louche effect result from the botanicals themselves.
Tasting Profile
Nose: Striking and herbaceous—dominant anise/licorice, bold wormwood bite, then fresh lemon-zest, mint leaf, and a whisper of fennel and basil emerging with air.
Palate: Dry and layered. The anise warms immediately, followed by herbal grassiness (tarragon, lemon balm), a subtle mint-leaf edge, and clean brandy-base warmth. Beneath it lies nettle/green-leaf texture and white-pepper spice.
Finish: Long and crisp. The herbal intensity lingers, returning to liquorice root and wormwood bitterness, then fading into a soft menthol/black-pepper note and pale citrus peel. The high ABV gives structure and warmth but the botanicals remain in focus.
