Why CPM?
CPM is a highly advanced stainless steel specifically designed to excel in the performance metrics most critical for kitchen knives: toughness, edge retention, and corrosion resistance. Its powered metallurgy process and unique alloy composition eliminate traditional trade-offs, allowing for a high-performance chef's knife that resists chipping, holds a fine edge, and is highly stain-resistant.
What is a Hamaguri Grind?
The Hamaguri grind, also known as a convex/apple seed grind, is an edge geometry for chef’s knives, particularly those of Japanese origin. Named for its resemblance to a clam shell. The shape provides greater support behind the cutting edge and minimizes friction between the steel and material being cut to allow for faster, cleaner, and smoother cutting and slicing.
A Chef's knife featuring a hamaguri (convex) grind and CPM MagnaCut steel offers a rare combination of exceptional strength, superior edge retention and a high corrosion resistance. This blend of highly advanced steel and specialized geometry creates a high-performance tool that excels in demanding kitchen environments.
