2019年に150周年を迎えたフンドーダイの創業は1869年。熊本県内では多くの方に知られている醤油メーカーです。麹づくりから自社で手掛け、創業当時から働く微生物群を受け継いだ諸味蔵でじっくりと発酵熟成させた生揚醤油を基本に、地元に愛される味を追求しながらアルコールフリー醤油などの新しい技術にも挑み続けています。

工場見学へ行った際、ユニークな設備がありました。初めて目にするものだったので「これは何ですか?」と質問をすると、減塩醤油をつくる設備だそうです。原理を伺うとなるほどと感じるのですが、一般的な方法とは異なります。これも長年突き詰めてきた技術だといいます。

 


見た目にもめずらしい透明醤油

本醸造の濃口醤油を蒸留のような加工で無色透明の醤油に。白醤油でも淡口醤油でもない、醤油は黒いという常識を覆し濃口醤油の風味を保ちながら素材の色を最大限に活かせます。和食にも洋食にも隠し味としても応用でき、塩味とうま味の両方を料理に活用できる新世代の調味料が透明醤油です。まずは、いつも通りに使ってみてください。見た目の違いに驚かない人はいないはず‼

 


目でも楽しめる料理に

いつものお刺身にも透明醤油で演出を!わさび醤油にすると緑のきれいな彩りなのに味はしっかりわさび醤油味です。マグロの漬け丼にすれば、赤身のきれいな色を保ったまま漬けだれのうま味も感じる贅沢などんぶりに。また、パイナップルやマンゴーなど風味の強い果物のジャムソースづくりも、甘さを引き立てながら醤油のうま味を加えた仕上がりになります。

少し変わった使い方としては「醤油洗い」に。野菜のおひたしや和え物をするときに、醤油を使って余分な水分を切ることを「醤油洗い」といいます。この下ごしらえをすることで、おにぎりに菜花などを使ってもおにぎりがべちゃっとならず見た目も緑の色鮮やかなままなのです。

So, as other reviewers make clear, this is very similar to Pack Darling and The Beta. It’s much closer aligned with The Beta, in plot and maybe more like Pack Darling with characters. That being said, I don’t hate this…..but it wasn’t great either. It’s both books mentioned but just….less. Less angst, less emotion, less feeling. The plot feels very half fleshed out, and the “bad guy” feels underwhelming. I didn’t really feel any real emotions from and of the male leads, except maybe Oliver. The others fell sorta flat for me. And Mika makes herself out to be this big bad ass straight outta training and then we never see it from here again with the one fitting room incident as the exception. SPOILER: The whole, “Oh, I’m actually probably an Omega, but I don’t wanna be but I do actually wanna be but no one can ever know my secret that I do nothing to hide “ thing fell so flat. She never commutes to believing she was secretly an omega, but also mentions her “secret” a lot. It just felt so manufactured. I’m intrigued enough to read part 2 and see how the author closes everything out, but this is not one I’ll recommend or ever come back to.
