白杉酒造位於京都府丹後地區，是生產越光米的地區之一，品質非常優秀更在西日本中最受歡迎。
「很想運用這麼優質的稻米來做美酒！」就是這樣第11代傳人白杉悟先生，開始利用食用米來釀造清酒。
通常釀造清酒會使用「酒造好適米」，但在2015年開始改變全面利用食用米來釀造清酒。
使用食用米釀造日本清酒是非常罕見的，不但要通過特殊的發酵方法，更使用燒酎用的麹菌來釀製，
通常日本酒只使用一種類型的酵母，他們卻使用三種不同類型的酵母來釀製，經過多次反複試驗，開發新派的日本清酒。
