The Matfer Bourgeat Black Carbon Steel Fry Pan is made to exceed your high standards for durability, longevity, performance, and hygiene in professional and home kitchens alike. This pan can be heated sufficiently to create the Maillard reaction cherished by all cooks. The black steel fry pan is made of single-plate high-carbon steel, bringing top-notch heat distribution for the perfect sear, preserving the vitamins and nutrients in your foods. At 3mm thick, retains heat for even and consistent cooking. Black carbon steel is a natural mineral material free of any harsh chemicals or coatings, and is PTFE and PFOA free. This steel pan can also withstand and maintain exceedingly high temperatures, as it can be used on all hob and stove types, even induction. Naturally nonstick once seasoned.  Avoid simmering acidic products such as tomato, wine or citrus.  Do not put in dishwasher or use detergent when cleaning.
