BINDING SYSTEM: These ingredients bind the bar together. Without these, the bar would just be protein powder. Allulose provides binding as well as sweetness. Unlike sugar, allulose is actually a prebiotic and shown to decrease blood sugar spikes when eaten with other carbohydrates. Polydextrose is also a prebiotic fiber that promotes a healthy microbiome. Glycerin, Tapioca Starch, and Soy Lecithin are used in smaller quantities to help the bar stay soft and moist over time.
FAT SYSTEM: The goal of David is to create the highest CFP bar possible (CFP = Calories from Protein / Total Calories), meaning the most protein with the fewest calories. Fat contains 9 calories per gram compared to 4 calories per gram for both protein and carbohydrates. This makes it essential to reduce fat calories in order to craft the best product possible. In addition to coconut oil, cocoa butter, and palm oil, David uses a modified plant to help achieve the texture of fat with fewer calories.
