The finish is long, and saline, delicately bitter, characteristic of vermentinu grown in Alzipratus Corsican terroir. The grapes were harvested at optimum ripeness levels in the first week of September. After 3 weeks of fermentation, the wine is stirred daily to increase contact with the lees.
