Production Area

• Zone: Produced in Western Sicily, on their own Casale estates in Buseto Palizzolo, the cradle of agricultural wisdom of Monte San Giuliano (Erice).

Manufacturing Process

• Harvesting: Manual picking into crates with careful selection of the grapes.

• Selection: Upon arrival at the winery, a further selection of the grapes is carried out before soft pressing.

• Fermentation: Takes place in stainless steel tanks at approximately 14−16∘C.

• Aging: The product ages on its fine lees (sulle fecce fini) for approximately $4$ months before bottling.

  Tasting Notes

   

  • Colour: Very clear straw yellow with greenish reflections.

  • Nose: Aromas of white peach, apricot, apple, and wisteria.

  • Palate: Fruity flavour, good freshness, decent fruit density, and salinity (sapidità) on the finish.

Food Pairing

• Pairs well with appetizers, grilled or fried shellfish, white meats, and Asian cuisine.
