Il processo di preparazione prevede una fase di lavaggio e cernita degli ortaggi utilizzati, seguita da una prima cottura ( soffritto) aggiunta della carne per la rosolatura , aggiunta di polpa di pomodoro e degli altri ingredienti e ultimazione della cottura. Il prodotto ancora a temperatura di ebollizione viene confezionato in vasi di vetro. Successivamente si procede alla sterilizzazione in autoclave.
