Made without added sugar (zero dosage) and fermented with natural yeasts, it reflects the house’s focus on a pure, unadorned expression of terroir. The blend is based largely on the 2017 vintage (about 60%), complemented by 40% reserve wines, with fruit sourced from organically farmed, hand-harvested parcels across four villages. Each parcel is vinified separately, then aged in a range of Burgundy barrels before blending.
