Our Mezcal is a delicious and balanced blend of hand-picked, matured Espadin Agave from the hillsides of San Dionisio Ocotepec, Oaxaca, Mexico, distilled using methods passed down through generations. Temo's name for the Palenque is Rancho Geuu Y Doo and it is nestled in the highlands of the Sierra Madre Mountain Range in San Dionisio Ocotepec, OAX, MX. Our small batch process utilizes hand-picked, sugar rich agave angustifolia hearts. This land has been in the family for generations. Our small batch process utilizes hand-picked, sugar rich, fully mature Agave Angustifolia hearts grown on the hillsides of San Dionisio Ocotepec. We slow-roast our agave hearts underground for 4-5 days utilizing Desert Pine and Volcanic Rock. Hermosa, our beautiful horse, pulls the enormous tahona to create ample surface area for fermentation. Natural yeasts from the maguey and surrounding micro-climate promote spontaneous fermentation in our wooden vats without the use of accelerants or additives. We double distill our Mezcal in rotating copper alembiques to sustain consistency in our Mezcal.
