Si parte con una fermentazione con macerazione sulle bucce che può arrivare anche a cinquanta giorni, per proseguire con un invecchiamento in botti di rovere per due anni, e poi chiudere con altri due anni di affinamento in bottiglia: il Barolo della cantina Scarzello è un Barolo che racconta le più antiche e radicate tradizioni del territorio.
