This is Afghanistan’s national dish for good reason. Fragrant sela rice is layered with golden carrots, plump raisins, and a tender halal lamb shank that falls straight off the bone. The meat is slow-cooked with cardamom, cinnamon, cumin and other aromatic spices until rich and flavourful, while the rice soaks up all the natural juices.
