Al palato è di buon corpo, vellutato, armonico e lungamente persistente.Il Valpolicella Ripasso DOC di Corte San Benedetto è ottenuto con la classica doppia fermentazione sulle vinacce dell’Amarone; quest'ultima lo valorizza nel colore, negli aromi e nel corpo. Affinato, poi, in barrique di rovere, è un vino ben articolato e di sorprendente eleganza, in grado di avvolgere piacevolmente il palato.
Ottimo in abbinamento a carne rossa in umido e arrosto, si sposa bene anche con i formaggi stagionati e la selvaggina.
