Balsamic vinegar is a condiment whose origins are lost in history, but not in the case of Acetaia Giuseppe Giusti, where it has been a way of life, handed down over four hundred years. In 1598 Cesare D'Este, forced by the Pope to leave Ferrara, transferred the capital of his Duchy to the then poor and rural Modena, which would remain the capital of the D'Este duchy until 1859. On their arrival, the Este family created official registers and statutes for all the guilds of crafts and trades, so that they could establish a bureaucratic system and raise taxes.
This is the first official documentation of the existence of the Giusti family business, which had already operated for centuries in the production and sale of typical Modena products: Lambrusco, "fine sausages" and in particular Balsamic Vinegar, which has been the family's pride and joy ever since.
