This Yoshihiro AOGASUMI Yanagiba is crafted from Yasuki Blue Steel #2 (Aogami #2), a high-performance Japanese carbon steel enhanced with chromium and tungsten for improved hardness, edge retention, and durability. It is widely used in professional kitchen knives for its long-lasting sharpness and reliable cutting performance.
Blue Steel #2 offers superior wear resistance compared to White Steel, making it highly valued by chefs who require sustained edge performance during intensive use while maintaining excellent sharpness.
Left-handed Yanagiba knives require specialized forging and sharpening processes due to their reversed geometry, resulting in lower production volume and higher craftsmanship requirements. This makes them significantly rarer and typically priced 30–50% higher than standard right-handed versions.
