667 - Alta Langa - Metodo Classico - Bubbelwijn - La Baretta - DOCG 2016

De bubbelwijn is gemaakt van 100% Pinot Noir-druiven (kloon 667 waaraan het zijn naam ontleent.)

Na een zorgvuldige selectie van de trossen worden de druiven voorzichtig geperst om de most te verkrijgen, die vervolgens wordt geklaard en dan wordt begonnen met de alcoholische gisting voor ca. 20 dagen bij een gecontroleerde temperatuur van 16.

De aldus verkregen wijn wordt bewaard in stalen tanks en in het voorjaar na de oogst gebotteld waarin hij zijn 2e gisting krijgt.

Het uiterlijk is helder strogeel, met een minuscule en aanhoudende perlage.

Delicate en harmonieuze neus met hints van witte en gele bloemen, gist en broodkorst. Smaak is aangenaam en mooi droog. Geserveerd bij 6/8 graden is het een uitstekend  aperitief en in combinatie met visgerechten.
