Klimaat
De 50 jaar oude bushvines van Paolo Leo staan in de droge Salento regio tussen Taranto en Brindisi in Puglia.

Ondergrond
Voornamelijk zand en klei.

Vinificatie
Na oogst gaat de fermentatie door in inoxen cuven. Daarna rust de jonge wijn gedurende 3 maanden op inox om de primaire fruit aroma's te extraheren. Vervolgens rijpt de wijn voor 12 maanden verder in zowel Franse als Amerikaanse eiken houten vaten en nog eens 3 maand op fles.
