De prachtige wijngaarden voor deze Les Faisses liggen op de beste plekken rondom Limoux. De Chardonnay druif voelt zich hier erg prettig en geeft rijke en volle oogsten. Maar dat dat heeft het wijnhuis ook de danken aan de oudheid van de ranken. Want inmiddels hebben de wijngaarden een gemiddelde leeftijd van wel 25 jaar. Door het perfecte mediterrane klimaat wat er heerst groeien de druiven rustig en vredig op en worden bij de perfecte rijpheid met de hand geoogst.Houtlagering voor de Les Faisses Chardonnay Limoux
Na de oogst rijpt deze witte wijn voor maar liefst negen a twaalf maanden op eiken houten vaten. Paul Mas kiest voor deze Les Faisses Chardonnay zowel Amerikaanse als Franse Vaten. Door de diversiteit aan hout soorten en om een deel van de wijn op nieuw en ongebruikt te leggen krijgt deze witte wijn zijn kracht. Hierdoor is de geur verfijnd en elegant, met aroma's van tropische vruchten, hazelnoten, citrusfruit, ondersteund door een toon van vanille.
