Bij Cignomoro draait het heel bewust om de keuzes die ze maken en gemaakt hebben. Ze hebben bewust voor Puglia gekozen, bewust voor de wijngaarden en om daar hun wijnstokken te laten groeien. Ze kozen hiervoor omdat ze geloven dat de ze hier wijn kunnen maken die spreekt. De kracht van de zon, wind en zee zorgen ervoor dat elke slok uniek is. Ze kozen voor de “rode landen” tussen Manduria en Carosino. Met de nieuwste vinificatie technieken, zonder de waarde van een familie wijnmakerij te vergeten zorgen ze ervoor dat de wijnen van Cignomoro tot de beste van Puglia gerekend mogen worden. 

De gezonde rijpe druiven worden gekneusd en gefermenteerd in kleine containers bij een uniforme en gereguleerde temperatuur. Inweking op de schillen gedurende meer dan een maand. Maceratie in roestvrijstalen tanks. Zes maanden in nieuwe medium-toasted Frans eikenbarriques; dan 4 maanden in flessen voor verdere verfijning.
