Polz is een vooraanstaand wijnhuis dat gelegen is in Zuid-Stiermarken, een prachtige wijnregio in Oostenrijk. Al meer dan een eeuw wordt het wijnhuis gerund door de familie Polz, die zich volledig richt op het produceren van wijnen van de hoogste kwaliteit. Polz is een pionier op het gebied van duurzaamheid en werkt volgens biologische principes. Door moderne technologieën te gebruiken, worden de wijnen optimaal geproduceerd en gemoderniseerd. De Ried Theresienhöhe is de hoogst gelegen wijngaard van het wijnhuis, deze wordt ook wel liefkozend Therese genoemd. Hier worden de Sauvignon Blanc druiven geteeld die gebruikt worden voor de Polz Ried Theresienhöhe Therese Sauvignon Blanc. Deze wijngaard is geclassificeerd als Erste Lage, wat te vergelijken is met de Premier Cru-status in Bourgogne. De bodem van de wijngaard bestaat voornamelijk uit leisteen, wat bijdraagt aan de knisperende zuren en de mineralige ondertoon die deze wijnen zo kenmerkt.
