De Ermitage Les Dionnières is een rode superwijn gemaakt van 100% Syrah druiven van stokken die gemiddeld 35 jaar oud zijn en die ter plekke zijn geënt. De druiven groeien op de akker Les Dionnières, een zuidelijke helling van klei en kalksteen met een toplaag van rolkeitjes. De druiven worden geoogst en ontsteeld. Temperatuur gecontroleerde gisting in betonnen cuves gedurende vier weken volgt daarop. Het sap komt goed vrij door de druiven te kneuzen en alles over te pompen. De wijn rijpt daarna in eikenhouten vaten gedurende gemiddeld 16 maanden. Circa 25% daarvan is in nieuw eikenhout. De Ermitage Les Dionnières heeft een heldere diepe robijnrode kleur. Een complexe neus met aroma’s van bloeiende viooltjes, klein rood fruit, kruidigheid en wat zoethout. De smaak is elegant en zeer krachtig.
