Al termine della fermentazione l’affinamento è eseguito nei medesimi contenitori a contatto con le fecce nobili per un minimo di 12 mesi. Da abbinare ai crudi di mare: ostriche, tartare di ricciola, sashimi di salmone. Funziona bene anche con crostacei al vapore e pesce di lago alla griglia.
