100% Pinot Noir
Delicate, robijnrode kleur. Zachte, verfijnde neus met rokerige impressies. Aanzet van aardbeien, veenbessen en zwarte kersen. Medium body met veel rood fruit en een vleugje zoethout. De rijping op Amerikaanse en Franse eik zorgt voor extra kruidigheid, een toetsje kruidnagel en rokerige toetsen. De afdronk is lang, evenwichtig en wordt begeleid door fluwelige tannine.

Heerlijk bij smoked chicken, gevulde kalkoen, fazant en ander gevogelte.

Klimaat:
Vallei van de Vardar. Minimale hoogte van de wijngaarden is 300m. De wijngaarden strekken zich uit langs de omringende bergen en zorgen voor afkoeling en moderatie van de temperaturen. De verschillende winden versterken dit nog en houden de wijngaarden droog. Droge warme zomers en koude winters met veel sneeuwval.

Ondergrond:
Arme bodems met een interessante kalk/leem verhouding en een hoog mineraal gehalte.

Vinificatie:
Met de hand geplukte druiven. Klassieke temperatuur, gecontroleerde fermentatie met maceratie op de pelletjes. Daarna rust de wijn verder op een mix van Franse en Amerikaanse eik waarna de uiteindelijke blend wordt gebotteld.
