Gilles Dumangin voegt Eau-de-Vie toe om zoveel mogelijk het fruit te bewaren. Tenslotte rijpt het jaren op houten vaten.

Dumangin's Force, 100% Chardonnay, komt geheel uit de warme jaargang 2019. 

'Finesse' rijpt, in tegenstelling tot de 'Craft' die op hout rijpt, bijna anderhalf jaar in stalen tanks om de frisheid van de Chardonnay uit de Noordelijke Montagne de Reims te bewaren. Aroma's van vers fruit als ananas, sinaasappel en abrikoos. In de mond vooral is deze ratafia 'juicy', fruitig met een zoete afsluiting.
