Heerlijk bij biefstuk, lam, licht belegen kazen en hartige taart. Nieuw in ons assortiment zijn de wijnen van Casa Silva. Begin maart mochten wij een bezoek brengen aan dit mooie familiebedrijf. Mario Pablo Silva is inmiddels de vijfde generatie die verantwoordelijk is voor het bedrijf, dat in 1892 werd opgericht door de Franse wijnfamilie Bouchon. Geheel volgens de Chileense trend heeft ook Casa Silva bij de aanplant van zijn wijngaarden de afgelopen jaren veel meer het accent gelegd op terroir. De oorsprong van het estate vinden we in het dorpje Angostura. Daar staat ook nog altijd de prachtige, historische bodega. Nieuwe projecten, op verschillende plekken, moesten veel meer het accent leggen op het juiste terroir. Eerst werd een wijngaard aangelegd in Los Lingues, direct aan de voet van de Andes. Door de intense zon en de grotere temperatuurverschillen aan de voet van de Andes is dit een ideale plek voor de carmenère. In Lolol, meer naar het westen in Colchagua Valley, is het koeler, en daar staan Côtes du Rhônedruiven als viognier en syrah, die het hier perfect doen. Nog verder westelijk, op acht kilometer van de oceaan, vinden de zeer koele wijngaarden van Paredones, met onder andere pinot noir en sauvignon blanc.
