Deze Australische rum, gedistilleerd in potstills, heeft een grote aromatische complexiteit en dankt zijn persoonlijkheid aan de specifieke gisten die tijdens de fermentatie worden gebruikt.
De geest wordt eerst 12 dagen gefermenteerd met Schizosaccharomyces pombe, een zeer zeldzame gist in de wereld van rum, en dunder.
Daarna volgt een driedaagse fermentatie met Saccharomyces cerevisiae.
De assertieve persoonlijkheid van deze Rum weerspiegelt perfect de rijkdom van het Australische terroir en de savoir-faire van de makers van Beenleigh Artisan Distillery.
