Vinificatie
De gisting vindt gedurende 20 dagen plaats in roestvrijstalen vaten, met daaropvolgend een gedeeltelijke malolactische gisting. De eerste rijpingsperiode van 7 maanden vindt plaats in zowel stalen tanks als barriques. Na de eerste rijpingsperiode wordt de wijn gedurende een periode van 30 tot 36 maanden op droesem gelaten.
