In Catalonië is een grote revolutie aan het plaatsvinden als het gaat om de druiven die gebruikt worden om wijn te maken. Sinds phyloxera daar had huisgehouden was het eigenlijk vooral aan merlot, cabernet sauvignon en temperanillo (ull de llebre) toevertrouwd om een groot publiek aan te spreken. Dat is nu wel anders, en dat laat ook deze blend van picapoll negre & blanc mooi zien. 

Deze natuurwijn is spontaan vergist, volledig op zijn eigen gisten. Na deze vergisting heeft de wijn 3 maanden op de gistcellen gelegen en is daarna ongefilterd de fles ingegaan.

Dit alles zorgt voor een lichtrode kleur met rijke aroma's van rijp rood fruit dat je doet denken dat je in Catalonië staat. Gul en met een typische aciditeit die ervoor zorgt dat je nog 'n slok wilt nemen. Op z'n best als 'ie licht gekoeld is.
