Si presenta alla vista di un bel rosso rubino brillante. Allolfattiva emergono inizialmente note fruttate di ciliegia e prugna, poi seguite da sfumature minerali e da ricordi floreali di violetta. Il palato è fresco e armonico, ben lavorato nella trama tannica e fruttato come il naso in chiusura. Buona la lunghezza.È ad agosto che luva, maturando, inizia a cambiare colore: è questa la fase detta dellinvaiatura, termine che deriva direttamente dalla parola vaio, antico aggettivo il cui significato è contraddistinto da macchie nere o scure, nereggiante, detto di frutta, olive e uva quando vengono a maturità. Oggi, però, il Vaio è anche il Morellino di Scansano etichettato Villa Poggio Salvi. Prodotto con uve di sangiovese in purezza e lavorato in acciaio, regala al sorso una bellaromaticità, ed è caratterizzato da profumi armonici e da una bella e scorrevole freschezza. Da apprezzare sin da giovane, propone anche una discreta evoluzione nel tempo. Non cè nulla di più da aggiungere: è davvero un bel Morellino di Scansano.
Da bere anche a tutto pasto con le preparazioni del menu di terra, è da provare in abbinamento allossobuco di vitello con i fagioli.
