It is also a rich source of protein, iron, and vitamins due to its high nutritional value. It's a wonderful replacement for rice or couscous because of its strong nutritional content. In bread, muffins, and other baked items, replace 1/4 cup flour with 1/4 cup coarse bran, or use both. 1/4 cup bran can be used in cooked cereals, soups, gravies, mashed potatoes, applesauce, meatloaf, and casseroles.
