Hand harvest, direct pressing, spontaneous fermentation. The two varieties are prepared separately by winemkaers Mait and Warren, soaking them in whole bunches in concrete tanks for 14 days on their skins, then aging the wine for 8 months

Hand harvest, direct pressing, spontaneous fermentation. The two varieties are prepared separately by winemkaers Maité and Warren, soaking them in whole bunches in concrete tanks for 14 days on their skins, then aging the wine for 8 months before bottling. Only 10 mg/l of sulfur is added to the wine before bottling.
