Fairview Goats do Roam Goat-Roti 2013Intense, dark ruby colour. Notes of dark red fruit, broody spice and violets with a crack of black pepper. A complex and layered palate with hints of sweet dark fruit and cinnamon, finishing with juicy tannins. The Paarl fruit was co fermented with Viognier, as both varieties were ripe at the same time. The Darling Shiraz is from a cooler site and harvested later and was fermented and aged separately. The Swartland fruit is from a dry land vineyard
Intense, dark ruby colour. Notes of dark red fruit, broody spice and violets with a crack of black pepper. A complex and layered palate with hints of sweet dark fruit and cinnamon, finishing with juicy tannins.
The Paarl fruit was co-fermented with Viognier, as both varieties were ripe at the same time. The Darling Shiraz is from a cooler site and harvested later and was fermented and aged separately. The Swartland fruit is from a dry land vineyard and adds depth to the final blend. Fermentation took place in French oak foudre and in stainless steel tanks. Pump-overs were done up to three times a day ensuring good colour and flavour extraction. After pressing, the wine was transferred to French and American oak barrels and matured for 18 months, with 20% new French barrels used.
