Little Pomona cidermaker James and team gave nature a helping hand by using a technique called keeving, helping them retain some of the natural sugars in the finished cider. They further slowed the fermentation by racking the cider on multiple occasions, before putting it into bottle where the cider completed its fermentation, giving a cider with a generous amount of bubbles and leaving around 16g/L of residual sugars.

Initially the lively sparkle serves to counteract the sweetness but as it settles down, the cider begins to open up to reveal an ever-evolving spectrum of flavours, aromas and sensations with each sip of the glass – white tea, peach, leather, baking spice, tobacco leaf and more. A deliciously complex and rewarding cider.
