INSTRUCTOR

Jacob M. Appel is a physician, attorney and bioethicist based in New York City. His first novel, The Man Who Wouldn't Stand Up, won the 2012 Dundee International Book Award and was published by Cargo. His short story collection, Scouting for the Reaper, won the 2012 Hudson Prize and was published by Black Lawrence Press in 2014. His most recent books include a novel, The Biology of Luck (Elephant Rock, 2013), an essay collection, Phoning Home (University of South Carolina Press, 2014) and a short story collection, Einstein's Beach House (Pressgang/Butler University, 2014).

He is the author of more than two hundred published short stories and is a past winner of the Boston Review Short Fiction Competition, the William Faulkner-William Wisdom Award for the Short Story, the Dana Award, the Arts & Letters Prize for Fiction, the North American Review's Kurt Vonnegut Prize, the Missouri Review's Editor's Prize, the Sycamore Review's Wabash Prize, the Briar Cliff Review's Short Fiction Prize, the H. E. Francis Prize, the New Millennium Writings Fiction Award on four separate occasions, an Elizabeth George Fellowship and a Sherwood Anderson Foundation Writers Grant. His stories have been short-listed for the O. Henry Award, Best American Short Stories, Best American Nonrequired Reading and the Pushcart Prize anthology on numerous occasions. His nonfiction has appeared in The New York Times, New York Post, New York Daily News, Chicago Tribune, San Francisco Chronicle, and numerous other regional newspapers. Jacob holds graduate degrees from Brown University, Columbia University's College of Physicians and Surgeons, Harvard Law School, New York University's MFA program in fiction and Albany Medical College's Alden March Institute of Bioethics. He taught for many years at Brown University and currently teaches at the Gotham Writers' Workshop and the Mount Sinai School of Medicine.

I love these cutting boards! I've had them about 3 weeks, and use them multiple times per day. They are flat, rigid, lightweight, easy to handle, easy to clean, dry fast, and the range of sizes is great. Much better than the plastic cutting boards they replaced! The top and bottom of each cutting board is a single piece of bamboo. On the larger boards, one or more darker bands across the board show the bamboo's natural joints, called nodes. The boards are gorgeous to look at, a pleasure to work on, and nice to touch. (I LOVE the rounded edges.) Each board is a sandwich: top, core, bottom, with all joints on the edges of the board so no glued joint touches your food. The working surfaces smell only of bamboo. (If I sniff the edges where the glued joints are, I can faintly smell wood glue.) The boards are finished with odorless food-grade mineral oil. After 2 weeks of daily use and detergent scrubs, I started to see a slight dulling of the finish. I refreshed them using the same butcher block oil (odorless food-grade mineral oil) I use on wooden cutting boards. I made sure the bamboo was thoroughly dry, wiped on a small amount of oil, and let them dry overnight in my vertical cutting board rack. This returned the finish to like-new condition.

Wooden Cutting Board

The purchase of a wooden cutting board was another selection in my quest to eliminate plastic from my environment when feasible. I had forgotten how great a wooden cutting board is to use. This one is solid, beautiful, and worked well with a sharp knife. It stayed firm on the counter, without sliding. The trough around the perimeter was effective in keeping any fluids from spilling onto the counter top. The size was perfect, allowing me to easily cut and contain the vegetables I was dealing with. Yet it was small enough to easily store and pull out for use. I followed the instructions for caring for the board, washing it with soapy water, drying it immediately, and wiping it with food safe oil. It’s been a solid purchase that will undoubtedly be a workhorse in my kitchen. The first use allowed me to toss my 3 cutting boards that I’ve been using for years and were worn. I’m anxious to see if it holds up with the daily use I’ll undoubtedly subject it to.
