Tasting Notes

Appearance

Pale ruby in colour with brilliant clarity and translucent edges, displaying the characteristic profile of premium cool-climate Pinot Noir. The wine's delicate hue and excellent clarity reflect meticulous winemaking, whilst the depth of colour suggests concentrated fruit and fine structure typical of quality Mornington Peninsula viticulture.

Aroma

The bouquet is beautifully complex and layered, opening with enticing notes of macerated ripe strawberry, red and black cherry fruit and barely cooked rhubarb. Elegant floral rose and violet top notes add perfume, whilst intriguing spice elements of coriander and cumin seeds, thyme and wild mint provide savoury complexity. A subtle hint of cocoa rounds out this sophisticated and expressive aromatic profile.

Palate

Very youthful and finely structured, the palate delivers vibrant flavours of crunchy red cherries and rhubarb with a touch of earthy mushroom complexity that adds savoury depth. The wine displays beautiful balance between fruit purity and structural elements, with firm acid providing freshness and velvety tannins contributing to the wine's elegant texture. The finish is long and juicy, showcasing the wine's exceptional quality and ageing potential whilst remaining approachable in its youth.

Pairs With

This versatile Pinot Noir pairs beautifully with Peking duck pancakes, really good fillet steak, slow-cooked duck leg, roasted game birds, mushroom risotto, and aged Gruyère or Comté cheese, whilst its savoury complexity also complements charcuterie and earthy vegetable dishes.

True story on Remote Viewing
Format: Hardcover
A good read into the unclassified world of remote viewing and UFO's/UAP's. Read it once and will read it again.

Anything from Skip I will read ASAP.
Format: Hardcover
I so look forward to reading this. Skip Atwater is a pioneer in the exploration of consciousness. I had the pleasure of meeting him for an interview while making my film Third Eye Spies and his knowledge of remote viewing and the Army history of the subject was some of the most compelling testimony I heard. I am excited to get my copy of this new book.
