What Makes It Special?
This unique Caturra goes through a meticulously developed anaerobic semi-washed process with carefully monitored steps to bring out its exceptional flavor profile:
🔹 Aerobic Fermentation (60 hours): The cherries are floated in a concrete tank to remove any that do not meet quality standards.
🔹 Anaerobic Fermentation: The coffee is de-pulped and transferred to specialized anaerobic steel tanks where the pH is monitored daily. Once the pH reaches 4.5, a unique lactic acid bacteria blend—crafted from boiled sugar cane and passion fruit—is added to develop its signature fermentation profile.
🔹 Drying & Storage: After fermentation, the beans are sun-dried for 20 days and then stored in GrainPro bags for another 20 days to ensure stability and preserve its rich complexity.
