Na jarenlang onderzoek in historische archieven en gesprekken met oudere generaties wijnbouwers heeft hij meer dan 200 oude klonen van Palomino Fino geïdentificeerd en 26 historische witte en rode druivenrassen teruggebracht in de regio. De Vara y Pulgar Blanco combineert Palomino Fino van albariza-bodems met Vijiriega Blanca en Malvasía, gefermenteerd in eikenhouten vaten en 12 maanden gerijpt op fûdres en barrique. Een droge, onversterkte witte wijn uit Jerez — iets dat decennialang ondenkbaar leek.

Beschrijving: Expressief en fris, met aroma's van citrus, steenfruit, witte bloemen en een karakteristiek zilt randje. Evenwichtig, sappig en persistent, met een mooie kalksteen textuur in de mond.

Lekker bij: Gamba's al ajillo, gegrilde sardines, gefrituurde vis of calamares — klassieke Andalusische tapas.

Leuk weetje: 'Vara y Pulgar' verwijst naar een traditionele Jerezaanse snoeitechniek — een knipoog naar de eeuwenoude wijnbouwtraditie die Orte met deze wijn in ere herstelt.
